10 Minute Cheesy Beans

Hello there Herbivores!!! I hope you had fun doing our last recipe ๐Ÿ™‚

Herbimeans plants vore- means one that eats (Herbivore-one that eats plants) let’s not get offended I’m a herbivore, lover of plants and you can be a herbivore too!

My creative friend, Rose, the other day misses one of our event’s dishes at the farm and so now I will dedicate this quick recipe so she can try it in her own home, like you will, hopefully! One of my comfy food to be honest!

Yummy Goodness Cheesy Beans

Ingredients:

  • 1 can of beans (red kidney or white beans)
  • Cooking oil (best to use coconut oil or olive oil)
  • 2 medium-cut onions
  • 2 cloves of minced garlic (we all I put three or four but if you do not like garlic 2 is enough)
  • 220g ofgrated cheese (or more if you prefer more) (three or more kind of cheeses are best :P)
  • Salt and pepper to taste

Optional Seasoning:

  • Add chili pepper flakes
  • Add 3-4 tbsp of tomato sauce (add 1 1/2 tbsp of sugar if you’re adding tomato sauce)

Procedure

First: Open your can of beans and strain half of the water inside

Second: Heat up your pan and add oil

Third: Add in your medium-cut onions and minced garlic mix until golden brown and very fragrant

Fourth: Add the beans and the water into the pan mix until the sauce thickens cook for 4-5 minutes (if you want to use it for filling cook for 2 more minutes and mash while it is hot)

Note: if you want it with a little sauce add 1/4 water however if you want it paste-like do not add the water

Fifth: Add your preferred seasoning (please remember to add salt) and stir well, then add your cheese on top then cover. Serve after a few minutes.

These CHEESY beans are best served with rice, tacos, nachos and my favorite, filling for my tortillas!
